Sausage Dip
Appetizer - 2009 Monroe Sausage Recipe Contest

- 1 Lb. Monroe Sausage (Ground Sausage)
- 1 can Original Rotel Tomatoes (diced tomatoes w/chilies)
- 1 8-oz package cream cheese, softened
- Sharp Cheddar Cheese, shredded
Cook sausage in large skillet – stirring until meat crumbles and is completely done. Drain sausage and return to skillet. Stir in softened cream cheese.
Drain diced tomatoes w/green chilies-reserving ½ cup liquid. Stir drained tomatoes w/green chilies into the sausage and cream cheese mixture. Then add the reserved liquid to the pan.
Spoon into lightly greased baking dish and top with sharp cheese until completely covered. Bake at 350° for about 20-25 minutes or until bubbly.
Serve with corn chips.
